"The grand design is in the quality of the ingredients not amount of ideas you have on a plate. I'm always trying to hit the staples the real classics from recipe books to instagram chefs with a heavy dependency of 'i hope this isn't shit' guesswork. You can often find the corners of my plates occupied by ferments or some for of acid twang."
