The Wasabi Company is a family-run business, specialising in growing and supplying fine Japanese ingredients. This umami-rich rice vinegar is fermented and aged in 100-year-old cedar wood casks that are each individually named after a sumo champion. It's delicately flavoured with kombu (kelp), bonito fish flakes, mirin and mushrooms. A longheld secret of top chefs, this vinegar is ideal for marinating vegetables and adding to dressings and sauces for depth of flavour.
ABOUT THE MAKER
The Wasabi Company is a family-run business specialising in the finest Japanese ingredients. The company started as a watercress farm with sites in Dorset and Hampshire and was the first in Europe to successfully cultivate the crop. They now grow a wide range of other Japanese ingredients, as well as delicious condiments, drinks, and seasonings to assist with creating Japanese dishes at home.
