These caper berries — the fruit of the caper bush — have a bright, floral sharpness that works beautifully with fish, from scallops to sea bass. Milder than capers, they’re just as happy on a cheese or charcuterie board, adding a punchy, savoury note.
Try blending them with lemon and garlic for a quick dipping sauce, or swap them in for olives to give your Dirty Martini a fresh, briny twist.
ABOUT THE MAKER
In 1964 Gaspar Perelló opened a stall in Barcelona’s famous Boqueria Market to sell the local Arbequina olives; his range grew, as did his reputation, and soon expanded to include some of the best olives from all over Spain. Brindisa, distributor of artisan Spanish foods, bought the company from their long-term supplier in 2016 to continue Gaspar Perelló’s work.
