INGREDIENTS:
Serves: 4
→ 1/2 jar of Peranakan Turmeric & Lemongrass rempah
→ 2 tbs dried shrimp
→ 1 tbs oil
→ 200ml coconut milk
→ 200ml water (or veg stock)
→ 1 carrot, chopped
→ 1/4 sweetheart cabbage, chopped
→ 1 handful green beans
→ 1 handful tofu puffs
→ Salt to taste
STEPS:
Step 1
Roughly chop up the dried shrimp.
Step 2
Over medium heat, fry the dried shrimp and rempah in oil till very fragrant, about 5 mins.
Step 3
Add the coconut milk and water and bring to a gentle boil with the carrot and cabbage.
Step 4
Once tender, add the green beans and tofu puffs, cover and let simmer till cooked.
Step 5
Season to taste and serve with lots of rice to mop up all that yummy coconut broth.
