DELLI Dish: Sayur Lodeh

"I guess you could call sayur lodeh a mixed vegetable curry, but it is more than that. I like to think of it instead as a light but punchy vegetable coconut stew."⁠`

INGREDIENTS:

Serves: 4⁠

→ 1/2 jar of Peranakan Turmeric & Lemongrass rempah⁠
→ 2 tbs dried shrimp⁠
→ 1 tbs oil⁠
→ 200ml coconut milk⁠
→ 200ml water (or veg stock)⁠
→ 1 carrot, chopped⁠
→ 1/4 sweetheart cabbage, chopped⁠
→ 1 handful green beans⁠
→ 1 handful tofu puffs⁠
→ Salt to taste⁠

STEPS:

Step 1
Roughly chop up the dried shrimp.

Step 2
Over medium heat, fry the dried shrimp and rempah in oil till very fragrant, about 5 mins.

Step 3
Add the coconut milk and water and bring to a gentle boil with the carrot and cabbage. ⁠

Step 4
Once tender, add the green beans and tofu puffs, cover and let simmer till cooked.

Step 5
Season to taste and serve with lots of rice to mop up all that yummy coconut broth.
