I like to think of it instead as a light but punchy vegetable coconut stew."` INGREDIENTS: Serves: 4 → 1/2 jar of Peranakan Turmeric & Lemongrass rempah→ 2 tbs dried shrimp→ 1 tbs oil→ 200ml coconut milk→ 200ml water (or veg stock)→ 1 carrot, chopped→ 1/4 sweetheart cabbage, chopped→ 1 handful green beans→ 1 handful tofu puffs→ Salt to taste STEPS: Step 1Roughly chop up the dried shrimp. Step 2Over medium heat, fry the dried shrimp and rempah in oil till very fragrant, about 5 mins. Step 3Add the coconut milk and water and bring to a gentle boil with the carrot and cabbage. Step 4Once tender, add the green beans and tofu puffs, cover and let simmer till cooked. Step 5Season to taste and serve with lots of rice to mop up all that yummy coconut broth.
