This is a salted caramel made using whey, a byproduct from our ricotta. Whey has a lactic tang which cuts through the sweetness as well as adding a slightly stretchy quality to the caramel. This is amazing with bananas on toast, over ice cream, stirred into a coffee or just off the spoon.
