ABOUT THE MAKER
Twelve Triangles is a scratch bakery in Edinburgh, they focus on working with independent and small scale suppliers and minimising their waste. Emily and Rachel began nearly 10 years ago baking sourdough and slowly fermented pastries for the community, wanting to make the best possible treats for those around them and using the best suppliers and ingredients they could find. Their business has grown to include a retail range, and savoury kitchen where they make everything they can themselves, with no added nasties.
Making whey caramel with the whey leftover from the process of making ricotta, croissant biscotti making the most of any croissants left at the end of the day.
