A fruity, summery hot sauce, with a kick of heat. Layers of flavour are created thanks to the many stage process. First, yellow peaches, red Serrano, Birds Eye and scotch habenero chillies are fermented for 2 days. Then, the chilli tops and peach stones are saved for roasting over an open flame, then steeping in cider vinegar, to extract their earthy, nutty flavours. These ingredients are blended to create a smooth, fruity and complex hot sauce.
It's great served with chicken, mixed into a salad dressing, and on pretty much everything! At Sam's restaurant, this is served over a slow cooked pork, sage and peach dish.
