Tillingham 'Col Fondo' Sparkling Wine, East Sussex, 2023

Tillingham’s English DNA is rooted in experimentation, from the varieties of grapes planted to the vessels used and the styles of wine produced over the years. Col is a reference to "Col Fondo": the Italian term to describe the ancestrel method of sparkling wine production. This sparkling has a salty lemon, elderflower and green apple aroma leading to a zippy palate with slightly creaminess to give the wine additional complexity and texture. An excellent aperitif, this zesty wine pairs perfectly with battered dishes and seafood.
