This is a salty, tart, and definitely spicy chilli preserve, that everyone in the Banerjee family fights over. This aachar packs some quintessential Kolkata joy into each mouthful.

Sohini's love for this aachar is as much for its uniquely deep and spicy flavours as for her home city and her habu. Sohini's habu (grandfather) was a passionate aachar maker, and a creative chef. Despite the social expectations of his time demanding that men focus on their day jobs, he found most joy spending time at the bajaar and creating preserves for the family.

To make the preserve, every chilli is carefully massaged with a blend of toasted spices and a mango powder that's made at home, from raw mangoes, which is then preserved in warmed mustard oil.

It's best served drizzled over some hot rice and daal. But, you can get creative too. Sohini absolutely loves adding it to the base of a pasta sauce, wok frying vegetables with it, or using it at the centre of a charcuterie board. It's perfect with a strong cheese and a cracker.
