This Curtido is a bright & zingy South American-style sauerkraut.
Curtido is a fermented cabbage dish from El Salvador. Think of it as a Central American sauerkraut. Shedletsky's take crisp white cabbage and ferment it for at least 18 days in a spicy brine packed full of lime and fresh chillies. We add Mexican oregano for a distinctive and addictive taste.

ABOUT THE MAKER
Shedletsky makes hot sauces, kimchi, pickles, and sauerkraut from their East London base. They are committed to creating delicious pantry staples, using classic techniques with fresh ingredients. Feeding people runs in the Shedletsky family; founder James' great grandfather, Sam Shedletsky, used to supply London's East End from his kosher butcher. One hundred years later, James founded Shedletsky's after getting hooked on pickling and fermenting; and named the business in honour of his great grandfather’s butchers' shop.
