Sauer Verjus is made from unripe Riesling grapes and is a byproduct of the wine industry. Traditionally, before the grapes reach optimal ripeness for winemaking, growers will harvest these unripe green grapes and often dispose of them.
Sauer Verjus aims to reduce this waste by pressing the unripe green grapes creating a bottle of the aromatic and sour juice; Verjus. The result is something unapologetically sour, intensely aromatic and full of energy. It’s crisp and green, like a sour apple, with a hint of Riesling's floral perfume in the background.
Use it where you'd normally reach for lemon juice or vinegar. Pour it over grilled veg, stir it into dressings or shake it into cocktails. It brings brightness without being overpowering. Clean, elegant and endlessly useful.
