Southerners were upcycling before it was a thing! Here, Eva takes the rind of the watermelon and pickle it in a cinnamon-infused brine. This two-Great Taste star pickle functions like a chutney - try it with cheese and charcuterie or cut it up and add to chicken and pasta salads. It's also delicious served as a condiment alongside roasts.

ABOUT THE MAKER

Eva, the founder of The Garden of Eva grew up up pickling and preserving with her American Southern mum, The family pickled and preserved three seasons out of four. Eva moved to the UK and noticed that there wasn't anything like the Southern condiments that she enjoyed making as a child and adult. So she took a risk and started The Garden of Eva in May 2021.The mission is to bring the preserves of the American South to the UK and beyond via flavour innovation and lowering food waste. The award-winning products include pickled watermelon rind, which holds 2 Great Taste stars; chow chow, which is a multi-vegetable pickled relish that was awarded bronze by the UK Quality Food awards; and a chilli-watermelon jam that was shortlisted by the Great British Food awards. New, flavourful products are under development!
