Fresh juicy Amalfi lemons are used to make this special marmalade: large, very fragrant, a little sweet and a little sour. To make the marmalade, all the lemons are hand-sliced, then cooked slowly to soften. Sugar is added, then boiled quickly until setting point is reached. The flavour is of fresh lemons: a perfect balance of bitter and sweet.
