Pastificio Carleschi’s artisan organic dry pasta is bronze extruded and slow-dried at a very low temperature. This London-made casarecce pasta uses spelt, which is a hulled wheat and uses less gluten than modern varieties. It is rich in iron, magnesium, zinc and other vitamins and micronutrients. Best used in rich meat sauces.

ABOUT THE MAKER

Pastificio Carleschi creates artisan, organic, bronze-extruded pasta using ancient grains. The company is the first in the UK to use 100% British organic spelt emmer einkorn. It was founded in 2019 by Giovanna Carleschi. The brand’s name 'Pastificio' means pasta factory in Italian, and 'Carleschi' is Giovanni's family surname.
