Curing Rebels are a creative team of chefs with a passion for high welfare, sustainable produce, and environmentally conscious packaging who produce delicious charcuterie and smoked salmon on the South East coast since 2020. Named after their hometown, this salami is made using high welfare ex-breeding sows. The Brighton salami is influenced by a classic Italian sausage, flavoured with fennel and fragrant Tellicherry black peppercorns for a little kick. Thick, hand-cut pieces of fat give this a nice creamy finish. Best served at room temperature freshly sliced to your preferred thickness. Enjoy it with your favourite cheese and glass of red wine.
