Chef James Cochran is a lover of all things chilli. With his roots in Scotland and the West Indies, he created this bold chilli oil, which uses desiccated coconut, pineapple vinegar, and tamarind. Dried chilli adds a desirable kick alongside a nutty texture and sweet and sharp flavour notes. Try it on everything.
James Cochran is the restaurant owner of London-based 12:51 and has roots in Scotland and the West Indies. This mixed heritage is reflected in Cochran’s cooking with his love of all things spice leading to the creation of his very own chilli oil.
