Adega do Demo create organic wines from native Ribeiro grapes, with a focus on soil health and traditional small-batch production in a restored 19th-century winery in northern Spain. The Bitoku 2021 is a distinctive white wine made from a blend of Treixadura and Loureira grapes, showcasing the region's terroir. It delivers a vibrant profile of fresh citrus and stone fruits, balanced with floral notes and a hint of minerality, making it refreshing yet complex. Best enjoyed chilled, Bitoku pairs beautifully with seafood dishes, light salads, or simply on its own. Bitoku is the name of a Japanese carp and it means “virtue” in Japanese. The name also has a strong connection to the seven virtues of Bushido (the philosophy of Samurai). For Laura and Carlos, the virtues show the way that a winemaker has to follow, from the vineyard to making wine. ABV: 12%.
ABOUT THE MAKER
Adega do Demo was started by Laura Rodríguez and Carlos Lorenzo in 2005 in the rural village of Alongos, Spain, where they farm four hectares of organic vineyards in the Ribeiro region. Their mission is to nurture the soil's microbiology for healthier vines, crafting small-batch wines from native grapes like Treixadura and Loureira. In 2018, they began producing their own wines in a restored 19th-century winery, focusing on quality and tradition.
