Rubies in the Rubble was founded by Jenny Costa in 2012 to tackle food waste while raising awareness of our food system. Using surplus fruits and vegetables, they create award‑winning ketchup and vegan mayo that prove great taste doesn’t have to come at the planet’s expense. By working within supply chains, they find a market for crops that would otherwise be discarded.
