Matsudai Ramen began as a pop-up just before lockdown in Cardiff and unexpectedly grew into a ramen kit business and permanent restaurant. They serve up seriously good bowls of ramen with a mission to make the best ramen imaginable accessible to as many people as possible — and to do it with kindness. Founded by James Chant, who had never worked in a professional kitchen before, Matsudai is rethinking how things are done in the industry, one bowl at a time.
