"One of sour, two of sweet, three of strong, four of weak": this is the Caribbean Rhyme that characterises the classic Island Punch, and that is honooured in this recipe.

Acknowledging the history of one of the oldest cocktails, this is made using the legendary Mount Gay, from the world’s oldest-running rum distillery.

At the base of the cocktail is the light and oaky Mount Gay Eclipse Rum, sweet and sour notes come from lime juice and lemongrass cordial with spice and refreshing aromas from cardamom bitters and a black tea blend.
