Clearspring is a company that specialises in organic, traditional Japanese foods. Their Organic Buckwheat Soba Noodles are versatile, gluten-free noodles with a nutty flavour from the buckwheat. These noodles have a soft texture, absorb the flavours of broths or dressings, and can be served in hot soups, cold with dipping sauce, or in a stir-fry. Soba cooks quickly (in just over five minutes), but due to the lack of gluten, they are quite fragile and require a delicate hand.
